De cicerchia is een oude peulvrucht, die altijd al aanwezig is in het mediterrane dieet. Het is een eenvoudig voedsel, uit de boerentraditie, en toch zeer rijk aan essentiële voedingsstoffen. Zoals bij alle goede dingen, heeft het de juiste tijd nodig om bereid te worden: we raden je aan om de nacht te gebruiken om de cicerchie te laten weken, daarna hoef je ze alleen maar onder stromend water te wassen en ongeveer veertig minuten te koken. Ze zullen al hun smaak vrijgeven en je favoriete warme soepen verrijken.
