While many brewers freely use the name of the city of Pilsen to identify their bottom-fermented lagers, the master brewers of Cologne have found a way to keep the name of their city close to their heart by using the name “Kolsch” for their beer, a protected designation for ales produced in the breweries of that area. ZOE was created with the intention of evoking, at least in part, one of the most exclusive top-fermented beers in Germany . With a deep yellow color, it is simple and easy to drink on the palate. On the nose , it has notes of honey , a light citrus character, floral hints and a lovely aroma of hops . On the palate, the bitterness is vibrant and aromatic . It can be drunk on any occasion or as an accompaniment to a fresh appetizer or a vegetable dip. It pairs well with a plate of cured meats or a second course of roasted or grilled fish . At the end of the meal, it can be paired with a fresh cheese such as a tomino, a primo sale, or a slightly aged pecorino. Zoe, translated from Greek, means "Life - Essence of Life." For Birrificio Trunasse, Zoe represents the beginning of its journey into the world of craft beers, being, inabsolutely, the first beer made in the production laboratory.
