GelFruit White Base is a blend of thickeners and gelatinizers formulated to give your ice creams a wonderfully creamy consistency.
Thanks to Gelfruit White Base you can obtain an ice cream identical to that of the best professional ice cream makers.
Dosage:100g per kg of finished ice cream.
Sample recipe.
The mixture can be worked cold by bringing the milk to a temperature of around 65° but even better hot, leaving it to hydrate for an optimal time of 8 hours.
Ingredients: Cream powder 75%, skimmed milk powder, dextrose, coconut oil, maltodextrin, vegetable fiber, flavorings. Emulsifier: Soy lecithin, Thickener: E412, E410, stabilizers: E401, E407.

- 100g cream.
