Saffron is a very precious pollen that is collected from the plant of the same name, the so-called True Saffron ( Crocus sativus ), a flower characterised by three stigmas, approximately 12-15cm tall, belonging to the Iridaceae family.

True saffron reaches full maturity in autumn, and the stigmas are then hand-picked and dried. It takes between 250,000 and 400,000 stigmas to produce 1 kg of saffron!
