Durum wheat can be used in two different ways: after 2-3 days as "wheat germ" or, after about 14 days, as "wheatgrass" for the well-known juice.

Sprouts are an easy and convenient food to grow at home year-round. They're ready to eat after just a few days. Compared to adult plants, they have a higher concentration of nutrients and are easier to absorb. Soak the seeds for about 10 hours, checking for broken seeds; remove any broken seeds if necessary. After soaking, rinse them and arrange them in a sprouter as indicated in the table. Use a multi-level sprouter, arranging them evenly. Water 2 or 3 times a day until sprouting is complete. Store the sprouts in the refrigerator, where they will continue to grow for several days. Wash before eating.
