Since it is gluten-free, it is recommended to use it in combination with gluten-containing flours such as wheat, KAMUT® khorasan wheat, or spelt. The recommended percentage is 30%. Pure amaranth flour can be used for shortcrust pastry, sponge cake, or with hydrocolloids such as guar gum and xanthan gum.
