Natural alkalizing starch, with a low glycemic index

Tibiona offers a selection of high-quality certified organic products , including Vivibio's Organic Kuzu from Finestra sul Cielo. This product is a natural starch mechanically extracted from Pueraria lobata, a Japanese perennial and climbing legume.

Kuzu stands out for its alkalizing capacity on the body, for its high amylose content (with a lower glycemic index than amylopectin) and for the presence of mineral salts ( calcium , phosphorus and iron ).

It can be used to thicken sauces, soups, gravies, desserts, ice cream, and compotes, and it is recommended to use it at a ratio of 5 to 12% of the liquid content. It can also be used in baked goods, at around 10% of the flour content, to improve fluffiness .

Kuzu is also an ancient remedy for reducing intestinal inflammation. To use it as such, dissolve a heaped teaspoon of kuzu in about 250ml of water and simmer until the liquid becomes clear. Add half a teaspoon of shoyu and drink warm. Alternatively, to stimulate intestinal peristalsis, add rice cream instead of shoyu.

Finally, to reduce the perceived acidity of the coffee, you can dissolve 1 teaspoon of kuzu and see the difference!
