Teff, or tef, is a grain typical of Ethiopia and Eritrea. It looks similar to amaranth but even smaller: it doesn't even reach 1 mm in diameter. In fact, with just a handful, you can grow an entire field.
From a nutritional point of view, teff stands out for its excellent content of complex carbohydrates (starch), fiber, calcium , and iron . It also contains an average of 12% protein .
