Description / Egg yolk powder 500 g
This product is obtained by drying fresh egg yolks using a very gentle industrial process. Drying produces a highly versatile product, with a long shelf life and identical to fresh egg yolks (once hydrated).
How to use:
It can be used, after hydration (1 part egg yolk, 1.25 parts water) in the preparation of sweet baked goods (custard, sponge cake, pâté à bomb, butter cream), or in savoury baked goods to increase colour and flavour.
- 1 fresh egg yolk corresponds to 12.5ml of water and 7.5g of egg yolk powder.
