In this category, you will find many nut flours, such as hazelnut, almond, walnut, and pistachio... For example, there is hazelnut flour made from the prized Tribolata hazelnut from the Langhe; vacuum-packed to preserve the naturally occurring unsaturated lipids. Hazelnut flour is used for desserts: sponge cake, meringues, shortcrust pastry, tiles... It is also suitable for preparing soups, creams, or flavoring cheeses. You will also find almond flour in two types: one made from peeled and shelled sweet almonds (devoid of the skin and the outer woody shell), used for desserts: primarily for shortcrust pastry, marzipan, and sponge cake. The other type is made from bitter almonds without the outer woody shell; this flour is used in very small percentages to flavor desserts (amaretti, cookies...), or to enhance the flavor of the glaze of panettone and colomba. Finally, you will find pistachio flour made by gently grinding shelled organic pistachios; it has an intense green color, irregular granularity, and a delicious flavor.
