These delicious cookies are handmade in the bakery of Marco Vinai, a young and enterprising man from Corsagliola, a tiny mountain village in the Cuneo province. Marco has decided to follow in his father's footsteps, continuing the family's century-old tradition of making biscuits (and bread, too).
Marco has made some very important choices: he does not use chemical additives, synthetic flavorings, battery eggs (only free-range) and local flours , from wheat to all the others (buckwheat, corn, chestnuts...).
These biscuits, known as castagnotti , are made with a traditional shortcrust pastry enriched with Piedmontese chestnut flour. They have a deep golden color, exceptional crumbly texture, and a unique flavor . They're ideal for a healthy and nutritious breakfast or snack, but also to accompany a cup of tea or coffee. Butter-free , but with all the flavor of homemade biscuits.
