We now know that not all flours are the same. How they are made, that is, how they are milled, determines the quality of the product we are going to purchase. Even cereals, to become quality flours, need to "take" their time, to follow natural rhythms, to transform slowly.

Flours from artisanal mills are almost always stone-ground, enhancing the flavours of the starting product. This is indeed the oldest technique and still today distinctive in high-quality production. The advantages of this milling come mainly from the slowness with which they are processed and the low temperatures that allow for the best preservation of the precious organoleptic characteristics of the product. No matter how they are processed, they will never reach a total refinement like "00" flour. Therefore, you will have a more "coarse" product and not a pure white colour, but undoubtedly richer.

In the more modern roller mill, the grain is peeled, effectively causing a sort of purification that leads to a depletion of nutritional value. It is true, therefore, that the traditional stone mill will work the grain in a slightly coarser way but will avoid impoverishing our dishes of precious substances. Among these are proteins, minerals, and vitamins. Those produced by Molino Bongiovanni are flours ground with natural volcanic stone. The goal is to preserve all the organoleptic qualities, providing a healthy, digestible, and tasty product.

In doubt, let’s choose those wholemeal flours that are stone-ground, a product rich in fibre that cleanses the intestine and enriches our dishes, making them unique in taste and variety. At least let what we eat be born slowly, far from the frantic rhythms of everyday life.
