Ingredients

  • 3 eggs
  • 75g of sugar
  • 200g of ricotta
  • 150g of chocolate (dark)
  • 50g of chocolate chips
  • 30g of corn starch (or rice)
  • unsweetened cocoa powder

Preparing the Dark Chocolate Moelleux step by step

  1. As the first step to prepare the dark chocolate moelleux, it is necessary to melt the dark chocolate and let it cool. Meanwhile, we will separate the yolks from the egg whites and sift the ricotta, setting it aside in a bowl.
  2. Next, we need to beat the yolks with the sugar, making sure to obtain a very soft and frothy mixture. To this, we will then add the previously sifted ricotta and the melted chocolate.
  3. Once a homogeneous mixture is obtained, we need to fold in the chocolate chips with a spatula.
  4. The egg whites set aside must be whipped until stiff peaks form and should be added to the mixture a little at a time. It is very important, for the success of the recipe, to achieve a soft and homogeneous mixture, free of lumps. For this reason, it is a good practice to fold the ingredients into the mixture with a spatula, mixing from the bottom up.
  5. At this point, we should butter the mould and then dust it with unsweetened cocoa powder. Afterwards, we can pour our mixture inside.
  6. Now we need to place the mould in an oven preheated to 180° and wait 30-35 minutes for our dark chocolate moelleux to be ready.
  7. The result should be a moist, soft, and very creamy dessert, ready to satisfy the palates of our guests!
