Description / Bayo Beans 500g Organic
Lots of protein, lots of vitamins and lots of flavour!
Bayo beans are a native bean variety from northeastern Ecuador, the Manduriacos Valley. Six hundred families from 14 mestizo and Afro-Ecuadorian communities grow and dry them at about 1,000 meters above sea level.
From a nutritional point of view, they are particularly diuretic, very rich in insoluble and soluble fiber, including two probiotic fibers, inulin and pectin (partly fermented by the bacterial flora with the production of important fatty acids, propionic and butyric). They are present in high quantities mineral salts such as: calcium , phosphorus, iron and zinc; vitamins: B1, B2, B3.
In any case, all macronutrients depend on the quantity of water, which in dry food is 10-12% and in fresh food 55%-85%.

How to use:
The nutty flavor and pinkish-red color make them excellent for soups and cold or hot cereal and vegetable dishes.
