Alfalfa sprouts (alfalfa) are the richest and most complete.
As with all sprouts, to fully enjoy all their great properties, it is recommended to consume them natural and raw , therefore avoiding all cooking.
In salads, it's best to add them to mixed salads, perhaps accompanied by other sprouts, such as soybean sprouts.
It's best not to cut them, but to use them plain, preferably by chopping them with your hands. For dressings and fillings, the qualities of alfalfa sprouts are fully appreciated when combined with light, delicate creams or cheeses, such as tofu or cottage cheese.
They go nicely with tomatoes, courgettes, celery and Belgian endive.
A healthy and fresh idea is to use them as a stuffing and filling for these vegetables. They can also be added to omelets and frittatas or used to fill tasty sandwiches.
HOW TO USE
Soak them in water overnight. The next morning, arrange them on the trays of the sprouter according to the instructions below, keeping in mind that the seeds will expand at least fourfold during the process. Store at room temperature and in a well-lit environment. Water 2-3 times a day until fully germinated. Eat immediately or store in the refrigerator for 1-2 weeks.
