An amazing organic flour!
AIDA is a family of semi-wholemeal organic flours, ground using stone mills. The importance of reintroducing products made from semi-wholemeal or wholemeal flours into our diet, in our experience, can only be ORGANIC. Indeed, organic grain cultivation differs from conventional farming because it occurs WITHOUT the use of synthetic chemicals or methods that alter the natural environment (herbicides), as per European Regulation 834/07.
Antico Molino Rosso is located in Buttapietra, in the province of Verona, and is a family-run artisanal flour mill . Known for the quality of its flours, most of which are stone-ground, but also use a more innovative roller mill. Aida 1 flour is obtained by stone-grinding organically grown soft wheat and only partially sifting the flour. Powdered sourdough starter is then added to enhance its organoleptic qualities. The result is a semi-wholemeal Type 1 flour ideal for pizza, bread, focaccia, and other baked goods.
