Aglupectin LA-S20: Pectin from Bio Line Laboratories
Aglupectin LA-S20 is a low-methoxy pectin from Laboratori Bio Line, extracted from natural citrus peels (lemon, lime, and orange), for food use. This pectin is specifically formulated for the production of standard and low-sugar homemade jams, using different types of fruit, varying quantities, degrees of ripeness, and acidity. Using Aglupectin LA-S20 results in a jam with high gelatinizing properties, ideal for low-sugar jams with suspended fruit pieces. The included measuring cup contains 3.5 grams of product.
Sample recipes
- Jam 70% fruit (g). 1000g fruit, 500g sugar, 10g Aglupectin® LA-S20, 1.4g citric acid (50% solution)*. Total 1500g
- Jam 50% fruit (g). 750g fruit, 750g sugar, 10g Aglupectin® LA-S20, 2.1g citric acid (50% solution)*. Total 1500g
- Jam 30% fruit (g). 500g fruit, 1000g sugar, 5g Aglupectin® LA-S20, 2.8g citric acid (50% solution)*. Total 1500g
How to Use
The dosage of pectin varies depending on the fruit to sugar ratio, for example:
- Jams with 70% fruit and 30% sugar: pectin dosage = 1.00% (10.0 g/kg of jam)
- Jams with 50% fruit and 50% sugar: pectin dosage = 0.75% (7.5 g/kg of jam)
- Jams with 30% fruit and 70% sugar: pectin dosage = 0.50% (5.0 g/kg of jam)
Heat the fruit to 50°C. Slowly add the pectin mixed with the sugar (1 part pectin and 2 parts sugar) directly to the fruit at 50°C. Bring to a boil and continue boiling for 3 minutes to pasteurize the fruit. Add the remaining sugar. Bring back to a boil. Add the citric acid solution. Fill the jar at high temperature and invert to sterilize the lid.
Does it contain gluten?
The company that packages this product (Laboratorio Bioline Srl) is implementing a self-regulated packaging process to minimize the risk of contamination by cereals containing gluten (this process will be completed by the end of 2017).
