Description / Khorasan Wheat Penne Rigate 500g Organic
Alce Nero Khorasan Wheat Penne Rigate (Denomination: Food specialty made from organic khorasan wheat flour) is a specialty made from khorasan wheat flour and water. It is produced by Alce Nero & Mielizia and distributed by Alce Nero di Monterenzio (BO).
Alce Nero Khorasan wheat penne rigate are made exclusively with wheat grown in Italy. Khorasan wheat originated in ancient North Africa and then spread throughout the Mediterranean; in Italy, it is grown in Sicily and Puglia. The artisanal production process for penne takes 3-4 days. The slow process makes the pasta more durable and holds up better during cooking. The dough is passed through bronze dies, which not only give the pasta a rough surface but also determine its shape. The penne are then dried at low temperatures, below 50°C, for approximately 50 hours.
