Characteristics: Matcha is a type of green tea and differs from other teas because it comes in powdered form rather than leaves. It is used in Japan during the tea ceremony and is considered one of the finest teas. It is obtained by grinding green tea leaves very finely. The tea plants that will become Matcha are cultivated with special care. As soon as the first spring buds appear—about 20 to 30 days before the expected harvest date—the plants are shaded. This encourages them to retain more chlorophyll, which turns the leaves a deep, bright green and gives the tea a sweeter, more rounded, and deeper flavor and aroma. After harvesting, they are steamed for about 30 seconds to lock in the aroma and halt fermentation. They are then blown with hot air, pressed, and dried without rolling, before finally being finely chopped.
