With the arrival of Christmas, this traditional dessert returns every year. Originating in Milan, it is now widely prepared throughout Italy in countless variations. The original dough is primarily made from flour, butter, and eggs, with the addition of diced candied fruit and raisins, but pastry chefs offer many alternatives, especially artisanal versions. In this case, the dough is mixed with delicious chocolate chips .
As its name suggests, panettone was once a large loaf of bread , baked without any kind of mold until the early 1900s. Angelo Motta changed that. In the 1920s, perhaps influenced by work on a batch of two hundred kulichs for Milan's Russian community, and undoubtedly determined to enrich his panettone with fat, he decided to wrap it in straw paper to give it a vertical shape. From this idea, the mushroom panettone developed, a shape that became the classic industrial product for decades.
Milan's pastry shops, however, continued to make panettone in a loaf form . Initially, without bands (or a pirottino, as its single-piece shape is now called), then with a shallow pan, made essential by the amount of fat used.
