Cascade is an American aroma hop obtained by crossing Fuggle and Serebrianka , a Russian variety. It is the result of experiments conducted at the University of Oregon between 1957 and 1972, the year in which the first Cascade variety was released. This conical hop (made up of the dried hop inflorescence) is among the best known and most widely used: characterized by a pungent, floral, spicy aroma and intense citrus notes reminiscent of grapefruit. It is recommended for use in American-style beers, especially pale ales , but also in IPAs , porters , and wheat beers.
