Discover Baule Volante Fior di Loto's Organic Blueberry Spread! A delicacy to enjoy for breakfast or as a snack: Baule Volante Fior di Loto's Organic Blueberry Spread combines the goodness of berries with the delicacy of rice syrup. Made with fructose, agar agar, blueberries, lemon juice, and rice syrup, it's incredibly low in calories! It's a neutral-tasting hydrocolloid (a gelatinous substance that binds water) derived from Gelidium algae. Nutritionally, it's rich in vitamins B, A, C, D, and K, calcium, iron , and mucilage (65%). It's not fully absorbed by the human body (only 10%), so it's low in calories and, at the same time, promotes intestinal transit. Unlike pectin, it doesn't require sugar to gelatinize, making it an excellent alternative in low- or no-sugar products. It's also thermoreversible (if melted at 90°C, it reverts to its original state when cooled). Unlike common gelatin, which melts at oral temperature, agar requires a higher temperature (90°C), thus maintaining its consistency even in the mouth. Because it's not made of proteins (unlike gelatin), it can be used in preparations made with pineapple and similar fruits that contain proteolytic enzymes (which break down the gel). Neutral flavor!
