Description / Rice Wine - Mirin 250ml

Organic Mirin

Mirin is a sweet cooking wine, a key ingredient in Japanese cuisine, produced through an ancient fermentation technique that transforms rice into a sugary liquor. The rice used for mirin is brown glutinous rice , also known as 'mochi gome'. This particular type of rice, compared to other types of rice, has a higher percentage of starch, which during fermentation turns into sugar, giving mirin its characteristic sweet flavor.

How to use

Mirin has a wide range of culinary uses. It's excellent for flavoring meat, fish, vegetables, and rice, giving them a unique and authentic taste. This sweet wine adds a subtle sweetness that enhances the other flavor notes. The flavor is further enhanced by pairing it with miso, shoyu (soy sauce), rice vinegar, or umeboshi (pickled Japanese plums). These pairings create a balance of flavors that is extremely pleasing to the palate.

Ingredients

The ingredients used in mirin production are simple but crucial to its distinctive flavor. Brown rice provides the drink's body and sweetness. Water is used in the fermentation process to help convert the rice starch into sugar. Finally, koji rice, a type of fermented rice, is a key ingredient in mirin production. Koji is essential because it introduces the enzymes needed to break down the rice starch and convert it into sugar. This process, known as saccharification, is what gives mirin its characteristic sweetness.

Mirin is an essential ingredient in many Japanese recipes and offers a simple way to add depth and complexity to a wide variety of dishes. With its balance of sweetness and umami flavor, it's a versatile tool for any home or professional chef.
