Enzo Marascio named his dough, made with wheat flour, legume flour, water, oil, and natural spices, a blend from which he creates his products.

But is it possible—one wonders—that a mixture of flours can create foods similar to meat in appearance, texture, and taste? Strange as it may seem, this is exactly how it is.

On the grill, the super muscle steak looks practically the same as a traditional one . Sure, initially, during cooking, its color isn't the typical red of rare meat, but a dull yellow. On the plate, however, it looks like a classic steak. What the eye doesn't see, the nose and palate can't miss.

The aroma is slightly reminiscent of freshly baked bread . At first bite, you get the sensation of tasting something very similar to liver or meat mixed with mushrooms, with a distinctive aftertaste, also thanks to the chili pepper, whose bits can be seen. The texture is striking: the product is not at all rubbery , although cutting it with a knife reveals a softness that is necessarily greater than that of a steak.

There's something that immediately catches your eye: the cured meats. They have a distinctive reddish color. " No coloring ," Enzo Marascio explains, "because to achieve this look, I simply add tomato sauce to the wheat muscle." What you're looking at, therefore, looks like cooked ham, albeit with a different and perhaps more intense flavor.
