Description / Not Just Sugar Vol. 1 - Iginio Massari
An absolute master of Italian pastry making and an ambitious work: to summarize in four volumes the enormous cultural heritage of a lifetime.
Iginio Massari, an absolute professional whom Pierre Hermé praises as the one who "opened his mind" and as a "man of heart" with an "encyclopedic" culture, has decided to share his professional and personal experience with his colleagues.
It is no coincidence that he chose the title Not Just Sugar, because these books go beyond recipe books and are intended as a tool for use and study, a guide to the daily work of the laboratory and, for this very reason, an essential text also for students in vocational schools.
In the first volume: shortcrust pastry, sponge cake, buttercreams, creams, cream puffs and meringues.
In addition to the theoretical part, there are many basic recipes and over 100 creations by the Master, splendidly illustrated with photographs by Vincenzo Lonati .
