How to use:
It is used in the preparation of sweet baked goods to add flavor and, in particular, color (it is a very intense natural colorant ). It is also excellent for making creams , pasta (both fresh and dried), and fillings for tortellini and ravioli. It can also be used in place of wheat flour in the preparation of cakes, biscuits, pancakes, and muffins. For a very soft result, the maximum substitution is 25%, while for recipes that do not require softness, the substitution can be up to 100%.
