The blend of durum wheat and slow drying process allow for excellent cooking stability and a unique flavor, which is enhanced when paired with traditional sauces or simply enjoyed plain to savor the taste of quality. The pasta is drawn using bronze dies, which give it the most traditional Italian shapes. The importance of the bronze die is easily appreciated on the palate: the pasta emerges with a rougher surface that not only holds the sauce better but also enhances the flavor, as this uneven surface causes greater surface fermentation of the durum wheat during drying.
