The Forest Honeydew Honey produced by Apicoltura Casentinese is a highly genuine product.
It is the only honey that bees produce without starting from flower nectar.
It comes from Metcalfa pruinosa, an insect of American origin recently introduced to our country and widespread especially in northern Italy. It attacks many different plants, both wild and cultivated, and produces abundant honeydew, collected by bees who make a very distinctive honey.
In certain environments rich in vegetation, such as woodlands, under particular climatic conditions like summer drought, bees may find honeydew an alternative carbohydrate source to nectar. It can be physiological, if the plant, in particular climatic conditions, secretes this sugary substance as a natural defense, or it can be parasitic , produced by insects such as aphids, leafhoppers, and scale insects, which suck the plant sap to feed on it, expelling the excess liquid.
The plants mainly involved in the production of honeydew are usually oak, chestnut, beech, lime and so on.
Honeydew honey is an excellent memory booster, useful for reddened skin and strengthening capillaries. Its liquid consistency lasts a long time, but it can crystallize, generally taking on a very viscous, stringy appearance.
It is characterized by a very dark color , almost black compared to other honeys. Its flavor is decidedly less sweet and cloying than nectar honeys , sometimes slightly salty, malt honeys, cooked vegetable honeys, and dried plum honeys.
