Alce Nero bronze-drawn Senatore Cappelli durum wheat spaghetti (Designation: Durum wheat semolina pasta) is a specialty made from durum wheat semolina. It is produced by Alce Nero & Mielizia and distributed by Alce Nero di Monterenzio (BO).
Alce Nero Senatore Cappelli durum wheat spaghetti is made exclusively with the famous durum wheat variety named after the eponymous senator from Abruzzo, who promoted the even more famous agrarian reform in the early 1900s that led to the distinction between hard and soft wheat. Grown in Italy, it stands out from other grains for its intense aroma, bold flavor, and ears of wheat up to 1.80 meters tall, tipped with black whiskers. The semolina dough, prepared with spring water from the Dolomites, gives it a unique flavor, thanks in part to the bronze-drawing process.
