Alce Nero Khorasan Wheat Whole Grain Penne Rigate (Denomination: Food specialty made from organic Khorasan wheat whole grain flour) is a specialty made from whole grain Khorasan wheat flour and water. It is produced by Alce Nero & Mielizia and distributed by Alce Nero di Monterenzio (BO).
Alce Nero whole wheat penne rigate made with Khorasan wheat are made exclusively with wheat grown in Italy. Khorasan wheat originated in ancient times in North Africa and then spread throughout the Mediterranean; in Italy, it is grown in Sicily and Puglia. The artisanal production process for penne takes 3-4 days. The slow process makes the pasta more resistant and holds up better during cooking. The dough is passed through bronze dies, which not only give the pasta a rough surface but also determine its shape. The penne are then dried at low temperatures, below 50°C, for approximately 50 hours.
