Alce Nero Whole Khorasan Wheat Spaghetti (Name: Food specialty made from organic whole khorasan wheat flour) is a specialty made from whole khorasan wheat flour and water. It is produced by Alce Nero & Mielizia and distributed by Alce Nero di Monterenzio (BO).
Alce Nero whole Khorasan wheat spaghetti is made exclusively with wheat grown in Italy. Khorasan wheat originated in ancient North Africa and then spread throughout the Mediterranean; in Italy, it is grown in Sicily and Puglia. The artisanal production process for penne takes 3-4 days. The slow process makes the pasta more resistant and holds up better during cooking. The dough is passed through bronze dies, which not only give it a rough surface but also determine its shape. The spaghetti is then dried at low temperatures, below 50°C, for approximately 50 hours.
