Today we are discovering teff flour, a great gluten-free alternative! Teff is a grain typical of Ethiopia and Eritrea, similar to amaranth but even smaller. Rich in complex carbohydrates, fibre, calcium and iron, it contains on average 12% protein.

With teff flour, we can prepare baked dishes, both sweet and savoury, but also simple and quick meals, such as wraps, perfect for summer days. Additionally, this dish also contains turmeric which, besides giving a pleasant yellow colour, has incredible properties, starting from its antioxidant and anti-inflammatory benefits.

Mix all the dry ingredients well, then add the water and oil and let it rest for about 30 minutes. Meanwhile, heat a flat non-stick pan. Pour the batter from above to create circles. Wait for the edges to lift and for there to be no more moisture on the surface, then flip using a spatula. You will be able to prepare about 8 wraps. Once cooked, they can be filled as desired!
The recipe can also be modified for sweet wraps, to be filled with pieces of fresh fruit
