Ingredients

  • 120 g flour
  • 100 g dark chocolate
  • 70 g sugar
  • 40 g butter
  • 2 eggs
  • 1 teaspoon unsweetened cocoa powder 1⁄2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 pinch of salt
  • Powdered sugar to taste

Procedure

Combine the chocolate with the butter and melt in a bain-marie or in the microwave. Set the mixture aside to cool slightly.
Tip: If you choose the bain-marie method, be very careful with the water. Just a few drops of water can cause the chocolate to seize and become unusable. If you opt for the microwave, cook on low power and check often, as chocolate can burn easily. Whisk the eggs and sugar in a large bowl until the mixture is light and creamy. At this point, you can add the cooled melted chocolate, mixing well. Finally, add all the dry ingredients, namely flour, cocoa powder, baking powder, cinnamon, and salt. You should be able to mix everything with an electric whisk. If it becomes difficult, simply use a spatula and mix vigorously. Now the dough should rest covered in the fridge for a couple of hours. Tip: If you are always in a hurry and need to organise your day, no problem: you can leave the dough in the fridge overnight and bake the next day.

Making the Biscuits

Take the dough from the fridge and the sifted powdered sugar. Using a spoon, take small portions of dough and form balls the size of a walnut. Roll the balls in the powdered sugar until they are completely white. Tip: You can also do two passes in the sugar; it is very important that they are nice and white to create the typical “snowy” appearance when baked.

Baking

Place the balls well spaced apart on a baking tray lined with parchment paper. Bake the biscuits in a preheated oven at 180°C for about 14 minutes. After this time, remove the tray from the oven and let them cool for about fifteen minutes. Et voila, your biscuits are ready to enjoy!
