Have you ever had leftovers or scraps of sponge cake or other baked goods? Don’t throw them away, transform them! Here’s a creative “waste-free” recipe: rum chocolate truffles.

Ingredients

  • 1 cake base (approximately half a 28cm cake)*
  • 7 tablespoons of rum (can be replaced with half orange juice)
  • 200 grams of dark chocolate
  • 50 grams of almond flour
  • 50 grams of butter
  • Cocoa powder and desiccated coconut for garnish

Method

Crumble the leftover cake into a large bowl and drizzle with the rum. Mix well and let it rest for a few minutes. In the meantime, melt the chocolate in a bain-marie along with the butter. Now combine all the ingredients and mix the mixture well. Let everything cool for half an hour in the fridge. Prepare a bowl with coconut flakes and one with cocoa powder. Form small balls and roll them in the coconut or cocoa. Rum truffles are not only the perfect "zero waste" recipe, but they can also be stored for a long time in the fridge.
