The first step to prepare our Red Velvet cake is to sift the flour and cocoa together with a pinch of salt. Then we need to cream the butter and sugar with a whisk until we obtain a soft and fluffy mixture. Once these ingredients are well combined, we will add the eggs, red food colouring, and buttermilk. To this buttery mixture, we will add the flour and cocoa, and using a wooden spoon, we will gently mix these two ingredients from the bottom up. At this point, in a small container, we will combine the baking soda and white vinegar, and when these are well mixed together, they should be added to the batter without stopping the mixing.

At this point, the Red Velvet cake is complete and ready to be baked; we just need to grease a round cake tin, pour the batter into it, and bake at 180° for 35 minutes. Meanwhile, we should pour the milk into a saucepan and add the sifted flour. It is very important, while the cream is heating, to keep stirring it with a whisk and let it boil for about 10 minutes without ever stopping stirring. While the cream cools, we need to beat the butter with the sugar and vanilla in a bowl, mixing until we obtain a soft cream. At this point, we just need to cut the base of the cake into three equal horizontal layers, which by now will have cooled, and with a spatula, fill each of the three layers with the white cream. The Red Velvet cake is ready, and before serving, we will let it rest in the fridge for about 10 minutes.
