We will choose whether to add 100 or 150g of sugar to the recipe depending on our taste. Once this is done, we need to add the ricotta and continue to mix everything, ensuring we create a smooth and lump-free mixture. Then we should add the orange zest and two teaspoons of its juice or another ingredient of choice to flavour our dessert, such as chocolate chips or lemon zest.

Baking

Since the Flourless Ricotta Cake will rise significantly, we need to pay attention to the baking methods. We should place the cake in a preheated oven at 180°. To bake our dessert, we will need a 20-22 cm springform pan. It is important to line the springform pan with parchment paper, ensuring the paper extends a few centimetres above the pan itself. This precaution is necessary as the cake will rise a lot during baking, often exceeding the edges of the pan.
