Ingredients for the base (serves 6):
  • 1 cauliflower
  • 2 eggs

Preparation:

Wash the cauliflower well, remove the leaves and stems, and steam it. Once cooked, dry it very carefully (the consistency of the dough depends on it!) and chop it finely.

The secret is to dry the cauliflower well to achieve a crunchy and dense mixture.

Add two eggs, a pinch of salt, and grated parmesan, measuring it to obtain a sufficiently dense dough. Start spreading the dough on parchment paper, using a spoon of oil to help: bake at no more than 150° for about half an hour. At this point, the base is ready! Just fill it as you like and bake again for about ten minutes.
