The first step to prepare our chickpea, courgette and onion frittata is to mix the bicarbonate of soda with the chickpea flour, then combine everything with some water. During this step, it is very important to make the mixture homogeneous, being careful to eliminate all lumps. Next, we will need to add the milk and ricotta to the mixture. Once this is done, we should add the grana, spices, pepper, and the remaining ingredients, mixing everything with a fork, ensuring the mixture is creamy. Salt is the only ingredient in this mixture that is optional, as it is not necessary for the proper preparation of the chickpea, courgette and onion frittata.

Cooking

While we make the mixture creamy, we need to heat a non-stick pan with some oil. Once hot, we will pour the entire mixture we just prepared into it. We will then need to cook the frittata over medium heat for ten minutes with the lid on our pan, after which we will need to flip the frittata and cook the other side for 5 minutes, still with the lid on.
